I recently found something cool that a friend of mine did with his truck. Some might not see it that way tho, but I feel it was kind of creative of him.
He turned his spare tire compartment to a storage space for drinks. So he setup a plastic divider to separate the different areas and then made provision for the ice water to drain out.
It actually takes less than 30 seconds to drain 6 bags worth of ice. The plastic divider pieces, though creatively designed, take on water if it's more than a few inches deep. Nothing that a carefully placed 1/4" drill bit can't fix.
A really cool setup in my opinion, especially when on a trip and you forgot to carry a cooler along. Although, I don't think I'd be trying it out anytime soon as I never forget my cooler on a trip.
